Minor 7 chords are formed by adding the 7th interval to the normal Minor chord. In terms of the notes of a Major Scale, you end up with a chord with scale tones 1-b3-5-b7. So for a C Minor 7 chord, the notes are C-Eb-G-Bb. As is the case with the Major 7 chord, the fifth interval is often left out.
Above are the most common voicings (well, with the 5th interval left out) you will see for Minor 7 chords.
